Do I have any recourse for a builder not installing gutters as shown in the plan/drawings? Bought 2 1/2 years ago.

Can you install wood planks behind a range (similar to shiplap)? If so, does it have to be a certain type?

I wholeheartedly agree with Susan, wood behind a stove is a safety hazard.
