Masons would install mortar on bricks.
Metal roof pricing ranges on what the structure details are (steepness, valleys, penetrations, wall flashings, chimneys, etc.) and what gauge, profile, ventilation and snow retention (if any) is needed or requested.
I would recommend a licenced mason Please don't have a handyperson do it. It will look terrible and may not withstand an siemic even properly.
i would call some of the licenced home builder in your area and ask them who they would recommend/

We located in Hermitage, TN. Same county (Davidson) as Nashville.
There are two sections we need to fill: one is 17' x 6'. The other is 9' x 8'

Most of the observed deficiences that we see in EIFS are the result of poor installation and flashing details. Almost all the push off failures that are seen now are the result of poor water management and water getting behind the EIFS and pushing it off the substrate.
See if it can't be fixed and flashed properly before ripping it all off.
The wash the brick mason is talking about is an acid wash. That should take care of the white stains. As far as the vertical brick looking a different color, the acid wash should take care of that too. However just like fabric and woodgrain anytime youbturn a material from horizontal to verticalbit will appear to be a different color because the grain pattern in the material is running differently and reflects light differently.
The acid wash should help with the motor color. As it ages it will naturally darken and blend.
